Last year at Thanksgiving I decided to try a new take on turkey. The recipe called for stuffing the bird with oranges, apples, and herbs. When it came time to make the gravy, I followed my same steps as always, but the gravy would NOT thicken. In fact, it started to curdle. Totally forgot that by stuffing the bird with ORANGES, the acidity of them made the gravy curdle. We ended up making our gravy from store-bought stock.
